Japanese Tradition - Designed for cutting sashimi, this Yanagiba knife embodies Japanese culinary tradition. Its single-sided blade allows for precise slicing of raw fish by pulling the knife towards you, ensuring smooth and clean cuts every time.

Premium Construction - Crafted from high-quality materials, this knife features a 27cm stainless-steel blade made of 9Cr14MoV steel, known for its durability and sharpness retention. The handle is meticulously crafted from ebony wood, copper, and ox horn, offering both elegance and functionality. The knife has a hardness rating of 60-58HRC and a sharpness lever rating of 8-11N. The blade edge angle is 9 to 12 degrees per side.

Knife care - Always wash the knife by hand to protect the material and maintain long-lasting sharpness. After each use, clean the blade under running water and dry it with a soft cloth immediately. Avoid placing the knife in the dishwasher, as it may damage the blade. Use only wooden boards or plastic cutters with medium strength to preserve the sharpness of the blade. Store the knife in a blade protector, knife block, or on a wall magnetic board to prevent damage. Not suitable for cutting bones (including fish bones) or frozen foods.

So right off the bat I will say I had low expectations for this sushi knife but I was pleasantly surprised. For one it's a Chinese made knife and Damascus can be faked fairly easily. That being said Chinese made isn't necessarily a dad thing as long as it's made properly. As a professional sharpener and Japanese knife enthusiast I can say this knife is well made, the grinds are done well and the ura (back side) of the knife has a hollow grind/is concave like it should be. And best of all the knife is real Damascus! The knife is a stamped knife meaning it's not hand forged. The manufacturer will order a large chunk of Damascus steel and punch out the shape of the knife in bulk and then do the grinding and sharpening. The knife comes very sharp out of the box, sharp enough to shave arm hairs. The handle is very comfortable to hold. Overall a great knife and for the price of R1899(price at time of this review) I would definitely recommend it to anyone interested in buying it. Would probably not spend any more than R2000 on it though. For anything above that price you can just get a hand forged Japanese made yanagiba which would be much more worth it at that price range. Lastly a side note; this knife technically isn't a yanagiba, its a sakimaru takohiki, still used for sashimi but it's not a yanagiba
