Japanese Tradition - Designed for cutting sashimi, this Yanagiba knife embodies Japanese culinary tradition. Its single-sided blade allows for precise slicing of raw fish by pulling the knife towards you, ensuring smooth and clean cuts every time.
Premium Construction - Crafted from high-quality materials, this knife features a 27cm stainless-steel blade made of 9Cr14MoV steel, known for its durability and sharpness retention. The handle is meticulously crafted from ebony wood, copper, and ox horn, offering both elegance and functionality. The knife has a hardness rating of 60-58HRC and a sharpness lever rating of 8-11N. The blade edge angle is 9 to 12 degrees per side.
Knife care - Always wash the knife by hand to protect the material and maintain long-lasting sharpness. After each use, clean the blade under running water and dry it with a soft cloth immediately. Avoid placing the knife in the dishwasher, as it may damage the blade. Use only wooden boards or plastic cutters with medium strength to preserve the sharpness of the blade.
